The signature cuisine of Kim de Dood
The gastronomic restaurant, Le Lys, is headed by Kim de Dood, a talented young chef and Luxembourg native who has come back to his homeland.
During his various experiences in Asia, where he obtained 2 stars at Le Saint-Pierre in Singapore, he also supervised the opening of Le Saint-Pierre's second address in Kuala Lumpur. In 2020, he took charge of the catering for the Luxembourg Pavilion at the Dubai World Expo.
Back in Luxembourg, he has no other dream than to make Le Lys and Villa Pétrusse “a must-visit culinary destination in Luxembourg”.
Rooted in the traditions of his homeland, Chef de Dood carefully sources ingredients from the finest producers in Luxembourg, Belgium, France, and the Netherlands. These regional foundations are elevated by exceptional ingredients, including caviar and the finest seafood – his specialty and passion.

At Le Lys, chef Kim de Dood offers a 4, 6 or 8-course menu blending traditional Luxembourgish cuisine with Asian influences, always with a plant-based option. His signature creations include a reinterpretation of Belgian-style green eel with local smoked trout, caviar, and buttermilk; monkfish yuzu kosho and bacon; a vol-au-vent of sweetbreads Kim style; venison with wild cranberry pepper...

Built atop the ancient casemates of the fortress, Villa Pétrusse has preserved its historic underground passages, once leading to ancient military shelters. Villa Pétrusse's finest wines are stored here under ideal conditions.
